Embrace your wild side and get adventurous with elk burgers.

Never had elk? Then you’re in for a treat. It’s got umami all its own and makes a fantastic burger. Served up with some fresh grilled green chilies and our Serrabanero Green Hot Sauce? And topped off with an egg?? Get outta town.

Ingredients

2 lbs ground elk  

Montreal Steak Seasoning 

2 green chiles  

4 slices pepper jack cheese 

½ cup mayo 

4 tablespoons Secret Aardvark Serrabanero Green Hot Sauce 

4 eggs 

4 hamburger buns 

Instructions

Form 4 equal balls of elk meat. 

Heat Cast Iron on med/high heat, until pan is nearly smoking. Place one elk ball in center of pan. Using the bottom of another pot or pan, gently smash the ball to form desired thickness of patty, sprinkle patty with Montreal Steak Seasoning.  

Slice green Chile pepper in half, length-wise. Place Chile pepper next to patty to begin warming it up.  

Using a metal spatula, flip burger. Place slice of cheese and slice of green Chile on burger. Crack an egg next to patty and cook sunny side up. Using a lid, cover pan to melt the cheese and cook the egg.  

Once cheese is melty, pull burger off. The egg may need more time to cook; when done, remove from pan.  

Repeat with remaining elk patties, chiles, and eggs.  

Mix together ½ cup mayo and 4 tbsp of Aardvark Serrabanero hot sauce.  

Use Serrabanero-mayo spread on both sides of bun. Place elk burger on patty (with cheese & green chile) and top with the egg. Top with more Serrabanero Hot Sauce and enjoy!  

Serve the patties on the bottom buns. Add bacon, onion, tomato, and lettuce. Enjoy!
