If you’re already a fan of deviled eggs, prepare to raise the bar. We hereby declare that this recipe is the GOAT!

Servings: 4 – 6

Prep Time: 20 min.

Cook Time: 15 min.

6 large eggs

1/3 cup mayonnaise

1 – 2 tablespoons of Smoky Aardvark Chipotle-Hab Sauce

1 tablespoon sour cream

1/4 cup finely chopped red onion

1 – 2 tablespoons chopped fresh chives

Salt and freshly ground black pepper to taste

Smoked paprika, for garnish

Boil the eggs: Place eggs in saucepan and cover with cold water. Bring water to a boil, then remove from heat and cover for 10-12 minutes. Drain hot water and transfer the eggs to a bowl of ice water or cold water to stop the cooking process. Peel the eggs once cool.

Separate the yolks: Cut eggs in half lengthwise. Scoop out yolks and place them in a medium bowl. Mash the yolks with a fork until smooth.

Make the filling: Add the mayo, Chipotle-Hab Sauce, sour cream, red onion, and chives to the yolks. Season with salt and pepper to taste. Start with a lesser amount of hot sauce and gradually add more until you reach your desired spice level.

Pipe or spoon the filling: There are two options for filling the egg whites:

  1. Transfer the mixture to a piping bag fitted with a star tip for a decorative touch. Pipe the filling into the egg white halves.
  2. If you don’t have a piping bag, simply spoon the mixture back into the egg white halves.

Garnish and chill: Sprinkle the tops with smoked paprika and a light chopped chive garnish. Cover and refrigerate for at least 30 minutes before serving.
