Chipotle-Hab Spicy Deviled Eggs

Ingredients
6 large eggs
75 g (1/3 cup) of mayonnaise
20-40 g (1–2 tbsp) of Smoky Aardvark Chipotle-Hab Sauce
15 g (1 tbsp) of sour cream
15 g (1/4 cup) of finely chopped red onion
5 g (2 tbsp) of chopped fresh chives
Salt and freshly ground black pepper to taste
Smoked paprika, for garnish
Instructions
Boil the eggs: Place eggs in saucepan and cover with cold water. Bring water to a boil, then remove from heat and cover for 10-12 minutes. Drain hot water and transfer the eggs to a bowl of ice water or cold water to stop the cooking process. Peel the eggs once cool.
Separate the yolks: Cut eggs in half lengthwise. Scoop out yolks and place them in a medium bowl. Mash the yolks with a fork until smooth.
Make the filling: Add the mayo, Chipotle-Hab Sauce, sour cream, red onion, and chives to the yolks. Season with salt and pepper to taste. Start with a lesser amount of hot sauce and gradually add more until you reach your desired spice level.
Pipe or spoon the filling: There are two options for filling the egg whites::
- Transfer the mixture to a piping bag fitted with a star tip for a decorative touch. Pipe the filling into the egg white halves.
- If you don’t have a piping bag, simply spoon the mixture back into the egg white halves.
Garnish and chill: Sprinkle the tops with smoked paprika and a light chopped chive garnish. Cover and refrigerate for at least 30 minutes before serving.
