Ingredients

4 15-oz cans pinto beans, drained and rinsed

½ pound uncooked bacon chopped

1 small onion diced

4 cloves garlic minced

2 tablespoons Smoky Aardvark Chipotle – Hab Sauce (or Aardvark Habanero Sauce – you pick!)

1 teaspoon dried oregano

½ teaspoon ground cumin

1 teaspoon coarse kosher salt

1 14-oz can diced tomatoes

1 12-oz bottle dark lager beer

¼ cup chopped cilantro

Instructions

Over medium-high heat in a large pot or Dutch oven, add chopped bacon and cook, stirring occasionally until brown and crispy. Transfer the cooked bacon to a plate lined with paper towels and set aside.

Add the onions and cook for 5 minutes, scraping up any browned bits on the bottom of the pot.

Add the garlic, dried oregano, salt, and ground cumin. Stir and cook for 30 seconds.

Add the rinsed pinto beans, diced tomatoes, beer, and Smoky Aardvark. Stir together to combine and bring to a low simmer.

Simmer the beans for 15 minutes and remove from heat. Stir in the chopped cilantro and crispy bacon. Serve immediately.
