- 2 lb red potatoes, mostly peeled and cubed
- 1/8 c sour cream
- 1/8 c unsalted butter
- 1/4 c Tillamook Mexican Blend shredded cheese
- 1 tsp kosher salt
- 1 tsp cracked black pepper
- 2 oz (or more if you’re feelin’ feisty) Secret Aardvark Habanero Hot Sauce
Place potatoes in a sauce pan, cover with water, and bring to a boil. Cook for 20 minutes or until tender. Drain thoroughly. Add all other ingredients and mash. For a creamier texture, whip in a mixing bowl. Serve hot.
Bonus points: Pour mashed potatoes into an appropriately sized casserole dish, cover with additional cheese, and bake at 325 degrees until the cheese melts.
