If this isn’t a drool-worthy burger, we don’t know what is. Prepare for a creamy, cheesy explosion of fat and flavor, spiked with the heat of our classic Aardvark Habanero Hot Sauce. All with the distinct and mellow flavor of lamb burger…just wow.

Oh, and it’s oh so perfectly messy. Wearing a bib while eating? Strongly encouraged.

Ingredients

1/3 teaspoon olive oil 

1/3 cup diced onion 

1 lb. Ground lamb 

1 egg 

1 tablespoon Aardvark Habanero Hot Sauce 

1/3 cup breadcrumbs 

1 clove garlic 

4 ounces soft goat cheese 

1 teaspoon extra-virgin olive oil 

1 teaspoon chopped fresh basil 

1 teaspoon chopped fresh oregano  

Instructions

Heat 1 tablespoon of olive oil in a small skillet over medium heat. Cook and stir the onions in the oil until soft and translucent, about 5 minutes.  

Gently kneed together the softened onions, lamb, egg, Aardvark Habanero Hot Sauce, breadcrumbs, garlic, salt, and pepper. Divide the mixture into 6 equal parts and roll into balls. Place into refrigerator until ready.   

Mix the goat cheese, olive oil, basil, and oregano until well combined; chill and cover for 5 minutes.  

Preheat grill for medium-high heat.  

Working with one portion of meat at a time, make an indentation in the center of the ball with your thumb. Fill the indentation with a heaping teaspoon of the goat cheese mixture. Gently pull and form the meat patty around the cheese filling, shaping into burger patty. Repeat for each ball of lamb mixture.  

Grill the patties until no longer pink in the center and well done, about 8 minutes per side.
