Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Servings: 4

Ingredients

2 medium or large onions

Extra virgin olive oil

Butter, optional

Kosher salt

½ tsp Sugar, optional

Kimchi to taste

¼ cup Mayo

1 tbsp Secret Aardvark Red Scorpion Hot Sauce (or more, to taste)

1 small onion (caramelized)

4 hot dogs

4 Hawaiian hot dog buns

Instructions

Peel and slice the onions length-wise and to your desired thickness.

Heat pan over med-high heat and add olive oil (adding butter if you like), about 1 tsp per onion used. Add sliced onion to pan and coat onions in oil.

Let onions cook, stirring occasionally. You may need to reduce the heat to med to avoid burning the onions.

After 10 minutes, sprinkle salt over onions and add sugar (sugar helps with the caramelizing process). Add a little water to pan to keep onions from drying out.

Cook and stir for 20-30 minutes letting the onions brown until they are a rich brown color.

Preheat grill to med-high heat. In a small bowl, mix mayonnaise and Red Scorpion Hot Sauce together. Adjust mayo & hot sauce to taste.

Grill hot dogs and lightly toast bun.

Prepare your hot dog bun with the Scorpion Mayo and add hot dog to bun.

Generously scoop kimchi over hot dog. Top with caramelized onions and drizzle more Scorpion Mayo over top.
