Let’s face it: Nothing warms the belly or the heart quite like homemade meatloaf. It’s the ultimate comfort food. But let’s also be real: Meatloaf can be darned boring and occasionally dry.

Smoky Aardvark Chipotle-Hab Sauce to the rescue!! Add some Smoky Hab Sauce to the meatloaf, plus a light coating of Smoky and Ketchup on top for a lightly spiced – but heavily flavored and magically moist – recipe that gets the tastebuds flowing with its rich chipotle umami and just the right amount of habanero kick.

Ingredients

For the sauce:

1 tablespoon Smoky Aardvark Chipotle-Hab Sauce

1 tablespoon Ketchup

For the meatloaf:

1 lb. ground beef

1 tablespoon olive oil

1 medium white onion

1 garlic clove (diced)

3/4 cup Panko breadcrumbs

1/3 cup Smoky Aardvark Chipotle-Hab Sauce

2 eggs

Instructions

For the sauce:

Mix Smoky Chipotle Hab Sauce with Ketchup. Set aside.

For the meatloaf:

Preheat the oven to 375° degrees.

Add parchment paper to the loaf pan, so it overhangs slightly.

Beat the eggs in a large mixing bowl until smooth, then whisk in 1/3 cup Smoky Chipotle-Hab Sauce, garlic, and olive oil, cumin, until evenly smooth. Mix in the onion, Panko breadcrumbs, and ground beef with your hands until evenly blended.

Transfer the mixture to the prepared pan and shape it, so it’s slightly mounded. The sides probably will not touch the short ends of the pan.

Generously brush the top of the meatloaf with the sauce.

Cook for about 1 hour.

Remove from the oven. Use the overhanging edges of the parchment paper to transfer the meatloaf to a cutting board. Remove the paper.

Allow meatloaf to rest for a few minutes before slicing.

Serve warm with extra sauce on the side.
