Oh, tofu. We love you, but like that nice high school friend we stay in touch with, you can be a little boring. The secret to great tofu? It’s ALL about the marinade. Try ours in this truly tempting recipe!

Ingredients

1 block extra firm tofu (drained, dried, and pressed)

1 cup maple syrup

3 tablespoons Drunken Garlic Black Bean Sauce

2 tablespoons Mirin

Instructions

Cut the tofu block lengthwise with the knife parallel to the cutting board, creating a slab about 1 inch thick.

Make diagonal cuts every 1/4 inch, stopping when the knife hits the objects.

Flip the tofu and cut straight across every 1/4 inch.

In a bowl, whisk together maple syrup, Drunken Garlic Black Bean Sauce and Mirin.

Preheat a griddle or cast-iron pan over medium-high heat for 2-3 minutes.

Add 3-4 tablespoons of neutral cooking oil to the pan, then place the tofu slabs in. Drizzle a little more oil over each slab and season with salt and pepper to taste.

Sear the tofu for 3-4 minutes. Flip the slabs and pour half of the umami sauce over the tofu, making sure each slab is fully coated.

Sear for another 3-4 minutes, then flip again and add more sauce. Continue cooking and flipping until each side reaches your desired level of char or crispiness.
