Note: The ingredients below will make 3/4 to 1 cup of chimichurri sauce.

  • If you’re using the chimichurri as a finishing sauce (drizzled over cooked steak), 1 cup is typically plenty for 2 lbs. of meat, especially since the sauce is bold and flavorful.
  • You’ll want extra if you also want to use it as a marinade. Chimichurri used for marinating and topping should be split into two batches (for food safety), and you’ll need about 2 cups total.

Ingredients

1.5–2 lbs. of flat iron steak

1 cup parsley (finely chopped)

2 tablespoons oregano (chopped)

2 tablespoons cilantro (chopped)

3 cloves garlic (minced)

1/3 cup olive oil

2 tablespoons red wine vinegar

1–2 tablespoons Secret Aardvark Serrabanero Green Hot Sauce

Pinch of red pepper flakes

Salt to taste

Instructions

Grill flat iron steak with olive oil, salt, and pepper.

Mix all chimichurri ingredients and let them mingle for 20 minutes. Use a food processor if you have one.

Slice steak and spoon sauce generously on top.

Serve with grilled veggies and crusty bread. Revel in the flavor burst of your new favorite steak sauce.
