Ingredients

1 large sweet potato (peeled and diced)

1 small onion (diced)

3 cloves garlic (minced)

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can diced tomatoes

1 ½ cups vegetable broth

1 tablespoon tomato paste

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1-2 tablespoon Secret Aardvark Smoky Chipotle-Habanero Hot Sauce (to taste)

Optional toppings: avocado, cilantro, lime wedges

Instructions

Heat olive oil in a large pot over medium heat. Add onions and cook until soft, about 5 minutes.

Add garlic and diced sweet potatoes. Cook for another 5 minutes.

Stir in cumin, smoked paprika, cinnamon, salt, and black pepper.

Add black beans, diced tomatoes, tomato paste, and vegetable broth. Stir well and bring to a simmer.

Reduce heat, cover, and let simmer for 20-25 minutes or until sweet potatoes are tender.

Stir in Secret Aardvark Smoky Chipotle-Habanero Hot Sauce and cook for another 5 minutes.

Serve with avocado slices, cilantro, and lime wedges.
