The only thing better than enchiladas is enchiladas easier. Mixing our Serrabanero with your favorite verde sauce is the best possible topping for this stacked-up turkey and leftover veggie surprise.

Ingredients

2 cups cooked turkey, shredded

1 1/2 cups green enchilada sauce (homemade or store-bought)

2 tablespoons of Secret Aardvark Serrabanero Green Hot Sauce (plus more to taste)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 zucchini, diced

1 bell pepper, diced

1/2 cup diced onion

8-10 small corn tortillas

1 1/2 cups shredded cheese (Monterey Jack, cheddar, or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

Optional toppings: cotija cheese, sour cream, sliced avocado, chopped green onions, and lime wedges

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Filling: In a large skillet over medium heat, add a drizzle of oil and sauté the onion, bell pepper, and zucchini until softened, about 5 minutes. Add the black beans, corn, and shredded turkey, stirring until everything is heated through. Stir in the Aardvark Serrabanero Sauce. Season with salt and pepper if needed.

Layer the Enchiladas: Spread a thin layer of green enchilada sauce on the bottom of a baking dish. Place 3-4 corn tortillas on top of the sauce, overlapping them to cover the bottom.

Add Layers: Spoon half of the turkey and veggie mixture over the tortillas, followed by a sprinkle of cheese and a drizzle of green sauce. Repeat with another layer of tortillas, the remaining turkey mixture, more cheese, and sauce.

Top Layer: Add a final layer of tortillas on top, covering them with the remaining green sauce and a generous sprinkle of cheese.

Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro and serve with sour cream, avocado slices, green onions, and lime wedges if desired.
