Let’s face it; it’s stew season. Throw it all in the pot for this anything-but-boring recipe (special thanks to our go-to-favorite Smoky Aardvark Chipotle-Hab Sauce).

Ingredients

2 cups cooked turkey (shredded)

1 tablespoon olive oil or butter

2 tablespoons Smoky Aardvark Chipotle-Hab Sauce

1 onion (diced)

2 garlic cloves (minced)

2 carrots (diced)

2 celery stalks (diced)

1 cup leftover mashed potatoes or sweet potatoes (for thickening)

4 cups turkey or chicken broth

1 can (14.5 oz) diced tomatoes

1-2 tablespoons hot sauce (adjust to taste)

1/2 teaspoon thyme

1/2 teaspoon rosemary

Salt and pepper, to taste

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Sauté the Vegetables: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion, garlic, carrots, celery, and bell pepper. Then, add the Smoky Aardvark Chipotle-Hab Sauce. Sauté for 5-7 minutes, until the vegetables are softened, and the onion is translucent.

Add Broth and Turkey: Pour in the turkey broth and stir in the shredded turkey. Add the diced tomatoes and hot sauce, adjusting the amount to your heat preference.

Add Seasonings and Leftovers: Stir in the smoked paprika, thyme, rosemary, salt, and pepper. Add the leftover mashed potatoes (or sweet potatoes) to the pot to help thicken the stew, and any other leftover vegetables (like green beans or corn).

Simmer: Bring the stew to a gentle boil, then reduce the heat to low. Let it simmer for about 20-25 minutes, stirring occasionally, until the flavors meld and the stew thickens to your liking. If it gets too thick, add a little more broth.

Serve: Taste and adjust seasoning, adding more hot sauce if desired. Garnish with fresh parsley or cilantro.
