Ingredients
1 cup long-grain white rice (uncooked)
2 tablespoons neutral oil (like canola or avocado oil)
1/2 small yellow onion, finely chopped
2 cloves garlic (minced)
1 tablespoon tomato paste (or 1/2 cup tomato sauce)
1 3/4 cups chicken or veggie broth
2–3 teaspoons Secret Aardvark Habanero Sauce (or to taste)
1/2 teaspoon salt (adjust to taste)
Optional: 1/2 teaspoon ground cumin or chili powder
Optional garnish: chopped cilantro, squeeze of lime, or more Aardvark on top
Instructions
Toast the rice: In a medium saucepan, heat oil over medium heat. Add the rice and stir frequently for 3-4 minutes, until it starts to turn golden and smell nutty. Toasty = tasty.
Sauté the flavor base: Add the chopped onion and cook for another 2-3 minutes, until soft. Stir in garlic and tomato paste and cook for 1 more minute.
Add the heat: Pour in broth, Aardvark Hot Sauce, salt, and any optional spices. Stir to combine and bring to a gentle boil.
Simmer and chill (sort of): Cover, reduce heat to low, and simmer for 15-18 minutes, or until rice is tender and liquid is absorbed. No peeking!
Fluff & serve: Remove from heat and let sit (covered) for 5 minutes. Then fluff with a fork, garnish if desired, and unleash the flavor.
