Aardvark Slider Burgers
Because who doesn’t want to eat more than one burger in a sitting? No, that’s just us? It won’t be once you experience the taste of fresh-grilled sliders topped with Aardvark Habanero pickled onions.
This fiery pickled onion recipe is sooo easy to make, toss in the fridge, and put on just about everything that stands still long enough (sandwiches, salads, bagels, hotdogs, etc., etc.).

Ingredients
Aardvark Habanero Pickled Onions
16-ounce mason jar
1 large red onion; sliced thinly
1 cup hot water
1 cup vinegar
¼ cup sugar
¼ cup salt
3 Tablespoons Secret Aardvark Habanero Hot Sauce
Bay leaf and other herbs; ex. oregano and thyme
Burgers
1lb ground beef (80/20)
6 slider rolls (cut in half)
6 slices of American cheese (sliced in half)
1 tablespoon butter
Little gem or other bibb lettuce
Aardvark Habanero pickled onions
Mustard *optional
Mayo
Secret Aardvark Habanero Hot Sauce (to taste)
Instructions
Aardvark Habanero Pickled Onions
Add the sugar and salt to the mason jar. Stack the sliced red onion and herbs of choice into the jar.
Fill jar with hot water, vinegar, and Secret Aardvark Habanero Hot Sauce.
Tighten the mason jar lid and shake until sugar and salt is dissolved.
Let sit in the refrigerator for at least 30 minutes.
Note: The longer you let it pickle the spicier and stronger it will be!
Burgers
Weigh out 12 portions of ground beef to 1.5oz each. No need to roll them into balls.
Cut the bottom of the little gem head and separate the little gem leaves.
Heat a cast iron pan to medium-high heat and add the butter. Place the buns cut side down in the pan to your desired doneness, 2-4 minutes. Plate the toasted buns open-faced and ready for the sliders.
Place 4 sliders at a time into the pan, smashing them thin with a metal spatula. Salt and pepper each patty and let cook for 2 minutes. Flip burgers and then salt and pepper again.
Cover each burger with a ½ slice of American cheese and cook only until the cheese is melted, about 1 or 2 more minutes. Stack two patties together on the slider buns. Repeat until you’ve cooked and plated all 6 double stacked sliders.
Top with the lettuce and Habanero Hot Sauce pickled onions. Spread whatever condiments you’d like on the buns and dig in!
