Ingredients

1 small seedless watermelon (about 5 pounds)

2 tablespoons olive oil

1 tablespoon lime juice

1/2 teaspoon smoked paprika

1/4 teaspoon chili powder

2 tablespoons crumbled feta cheese

2 tablespoons chopped fresh mint

1 – 2 teaspoons Aardvark Habanero Hot Sauce

Pinch of cayenne pepper

Salt and freshly ground black pepper to taste

Instructions

Prepare the watermelon: Cut a seedless watermelon into 1-inch-thick slices. If desired, use a cookie cutter to cut out fun shapes from the slices.

Make the marinade: In a small bowl, whisk together olive oil, lime juice, Habanero Hot Sauce, smoked paprika, chili powder, and cayenne pepper.

Marinate watermelon: Brush watermelon slices with the marinade, coating them evenly on both sides. Let them marinate for at least 15 minutes, or up to 30 minutes for a deeper flavor.

Preheat grill: Preheat your grill to medium-high heat.

Grill watermelon: Gently place watermelon slices on the preheated grill. Grill for 2-3 minutes per side or until grill marks appear and the watermelon is slightly softened but not mushy.

Assemble and serve: Once grilled, transfer watermelon slices to a platter. Crumble feta cheese over the top, followed by chopped fresh mint. Season with a pinch of salt and freshly ground black pepper for extra flavor.
