Smoky Elote Pasta Salad

INGREDIENTS

Pasta:

250 g (2 ^1/2 cups) of macaroni noodles

255 g (1 ^1/2 cups) of frozen corn

60 g (^1/2 cup) of Cotija cheese (crumbled)

25 g (^1/2 cup) of red onions (diced)

15 g (^1/2 cup) of cilantro (chopped)

2 garlic cloves (minced)

5 g (1 tsp) of chili powder

2 (^1/4 tsp) each salt, pepper, and garlic powder

Dressing:

215 g (1 cup) of mayo

Smoky Aardvark Chipotle-Hab Sauce

125 g (^1/2 cup) of Greek yogurt (or sour cream)

60 g (^1/4 cup) of lime juice

A dash of salt and pepper!

INSTRUCTIONS

Cook and cool macaroni noodles.

Roast frozen corn until crispy and sprinkle with a dash of salt, pepper, and paprika.

Add Cotija, onion, cilantro, garlic, chili powder, salt, pepper, and garlic powder.

In a separate bowl, mix mayo, Greek yogurt, lime juice, salt, and pepper and stir.

Combine ingredients into one bowl and toss thoroughly.
